Hello Live Out There friends!

I’d like to introduce you to my current favorite treat. With only a handful of ingredients, you may be wondering HOW ON EARTH can these possibly taste like fudge? Oh, you’ll see. I made these during the work week in preparation for a weekend hike and it took all of my willpower to not devour the entire batch in the process. They’re decadent, wholesome and made with active adventurers in mind.

These would be a great treat to surprise your hiking buddies with on the trail, or as a running fuel alternative to sugary gels. I’m confident you’ll love these as much as I do. Feel free to experiment with different mix-ins, spices, flavour combinations and let me know what you come up with!

Fudgey Energy Bites
Yields 10-12. Okay, they make 12, but I ate two while making them. For quality assurance purposes, of course. 😉

Gluten free, dairy free, refined sugar free, paleo & vegan

Ingredients:

1 cup firmly packed medjool dates, pitted and softened*
2 tablespoons almond butter
1 tablespoon cocoa powder
Pinch of sea salt
Hemp seeds and/or unsweetened shaved or shredded coconut

*If the dates aren’t super soft, soak them in warm water for an hour (or overnight)

Directions:

1. Turn the medjool dates into a thick paste. To do so, you can either pulse them in a food processor, high powered blender or mash them with a fork (or your hands. I totally used my hands)

2. Combine the almond butter and sea salt with the date paste

3. Add the cocoa powder. Here’s where you’ll need to get in with your hands to ensure the cocoa powder mixes well

4. Form into 1″ balls, then roll each ball in hemp seeds and coconut – my personal favorite are the coconut rolled bites – they remind me of a Bounty Bar!

Store in the freezer or refrigerator until adventure-time
